Yes You Have seen Correctly, It is a simple Savory Rice that I Blog about today. As I have promised to try and keep my recipe bloggings as easy and simple as possible, hence this idea of blogging about how I go about preparing this easy dish.
There are many a times when we do have an excess of some food leftover in the fridge, and wasting is a definite NO-NO, in this day and age, as our elder relatives have done for years before us, we try to whip up a totally different dish with those leftovers, so the family may Enjoy a lovely meal another day. These are dishes I love terming as my Want Not, Waste Not Dishes?
I some times tend to make a little more than is needed for just my husband and I, like this yellow tinted rice, I had leftover in the fridge from the weekend. ( Make yellow tinted rice by boiling your rice as per pack instructions, adding 1/4 teaspoon Turmeric Powder, 2 Cardamom Pods and 2 Small sticks of Cinnamon Sticks and salt to taste, to add flavour)
Simple Savory Rice (MS)
2 Cups of Cooked Yellow Tinted Rice
3/4 Cup of Diced Mixed Vegetables (Carrot, Sweetcorn, Peas and Greenbeans)
1/4 Cup diced peppers ( Red, Green and Yellow)
1 Tablespoon Butter/Margarine
Salt and Pepper to Taste
1/4 teaspoon of Dried Mixed Herbs (I used Robertsons variety, but any brand may be used)
1 teaspoon Spice For Rice (Robertsons Variety again)
~steam the mixed Vegetables with a little water and season with salt and pepper.
~Melt the Butter/Margarine together with the Mixed Dried herbs in the Microwave.
~When the vegetables are almost done, but still crunchy, add the Chopped Peppers and follow with adding the cooked rice and melted butter/herbs, and toss well. Allow the rice to steam through until warmed, before adding the Spice For Rice seasoning and stirring through, taste and adjust with more seasoning if need be.
~All that’s left to do now is Serve Up and ENJOY!!!, served alongside any Protein or Vegetarian Dishes?
