So a little on the other end of the spectrum for my foodie post today, after that delectable sweet treat of Rose and Strawberry Milkshake Ice Lollies , A dose of healthy foodie post is a must ?. This Mediterranean Lentil Salad, is Quick and Easy to prepare, Perfect for the warmer months served chilled, or even during colder months, served warmed.
I Love travelling the world, and this salad inspiration I had picked up In Dubai, While staying at the Movenpick Hotel, in Jumeriah Beach a good few years back. We had been upgraded to enjoy their Executive suites, and this came with an added benefit of enjoying their all day lounge exclusive to their executive guests. So on one afternoon visit to the lounge, this particular salad had been on the buffet table. Delightfully Light and Nutritious, this salad, had definitely kept me going until dinner. As some of you may know, You can tend to loose track of time, when you busy exploring new places, This was a perfect salad to keep up the energy levels too.
The 1st time I attempted to re-create this salad I so Enjoyed in Dubai, Had been on a balmy afternoon in Bahrain in 2015. Yeah, You guessed right, My blog post pics can be dating back to many years, patiently awaiting some recognition from me, before they are up for public viewing.
This Mediterranean Lentil salad has since been a favourite of mine and Imran’s. I always seem to keep some of the boiled Brown Lentils, away in the freezer, ready to be thrown together in salad. Brown Lentils is a major ingredient in many South African’s Biryani Dishes, and we know it as Masoor Dhal, and so my preparations for the lentils, lends its technique to this particular dish.
It basically is Boiled brown Lentils, Flat leaf parsley, cocktail tomatoes and red onion. Toss together with some of my Homemade Salad Dressing and crumbled feta cheese. Simple, Basic flavours that brings this salad to the fore. I had layered this salad onto a bed of Salad Leaves, but it is perfectly fine without any, and keeps well in the refrigerator, perfect to pack away for a takeaway lunch box or picnic??

Mediterranean Lentil Salad

1 Cup Brown Lentils (Masoor Dhal)
1/4 teaspoon Turmeric Powder
1/4 teaspoon Salt
Step 1 Instructions:
~ Clean, Wash and Soak the Lentils in warm water, for 20 minutes or more.
~ Cover with just enough Boiled water, add the Turmeric and Salt, and bring the lentils to a boil, until it is done when it is just beginning to soften, take care not to allow the lentils to get mushy. It should be firm, yet cooked through.
~ Strain the lentils to remove the excess water.
Prepare the Homemade Salad Dressing / Or you could use a Store Bought variety
1/2 a Large Bunch of Flat Leaf Parsley
1 small Red Onion, finely chopped
6-8 Cherry Tomatoes, cut into quarters
~ Chop all the salad Ingredients
~ Add 2-3 Tablespoon of the Homemade Salad Dressing to this chopped ingredients
~ Now Toss these into the Boiled Lentils, season lightly with salt.
~ Add the Crumbled Feta Cheese, and add more Homemade Salad dressing if you like.
The Mediterranean Lentil Salad is perfect to enjoy as is, OR topped onto a bed of salad leaves like I did here.
NOTES BY FOODEVA MARSAY
- I boil a little extra of the lentils and keep excess in a sealable freezer bag, for another day.
- you may add some chopped chilli if you prefer a spicier version.
- This Salad can be eaten warm immediately after the lentils are ready, and all your ingredients are ready to be tossed.
- A Perfect Side salad to an protein dish, or just perfect all on it’s own.
- Without the salad Leaves, this salad keeps well in the refrigerator, to pack away for a lunch on the go, or a Picnic/Braai/barbecue
