Crispy on the outside, soft and fluffy on the inside. These Parmesan and Garlic Smashed Potatoes, make for an awesome side dish, or if you dare, a super main meal too.
There can never be ‘too many ways’ to serve this humble little tuber right? And These smashed potatoes, belong right up there in your recipe archives, together with my Tangy Mashed Potato , Potato Hotties or the Easy Roast Potatoes. During the summer holidays, These smashed potatoes, were marvellous paired with my leg of lamb roast, and the rest of the trimmings. But, rest assured, these smashed potatoes, will make a great accompaniment to almost any main meal, be it grilled meats, roast chicken or grilled seafood.
I like adding garlic and parmesan to my smashed potatoes, but you may choose to omit them if you please, and make them simple and regular. Adding in fresh chopped thyme/rosemary or even the dried version of these herbs, adds more flavour to a simple side dish.

Parmesan and Garlic Smashed Potatoes

1 kg Baby Potatoes
Salt and Pepper (according to Taste)
2 Teaspoon crushed garlic (or finely chopped)
2 Tablespoon Butter
1 Tablespoon Olive Oil
1 teaspoon Fresh Thyme/Rosemary, finely chopped (optional) OR Dried Variety
2-3 Tablespoon Finely Grated Parmesan Cheese
Freshly Chopped Parsley to serve
~ Preheat Oven to Grill setting, @190-200 degree celsius
~ Wash the baby potatoes well, leaving skin on.
~ Drizzle on the Olive oil, season with salt and pepper, and steam in a microwave-safe steamer, until potatoes are tender.
~ Spray an oven tray with a non-stick spray, and place on the tender baby potatoes on them.
~ Gently toss the baby potatoes with the garlic and the parmesan cheese, and using the back of a fork or masher, Press down (SMASH) onto the potatoes, enough to flatten them but still maintaining it in one piece.
~ Dot the smashed potatoes with butter, and grill for 10 minutes, Remove and Add more cheese if you prefer, returning to oven for a further 5 minutes or until potatoes are crispy and browned.
~ Serve Immediately with a good sprinkle of freshly chopped parsley.

> You could opt to use bigger potatoes, simply adjust seasoning accordingly
> The Baby potatoes can also be boiled instead of steamed in a microwave, until tender. IF BOILING potatoes, season them with all ingredients, after boiling and before you grill them.
> You can also drizzle more butter when done and add a dollop of sour cream when serving.
