Gourmet Pizza Tart

Being from Johannesburg, South Africa, my better half,Imran and I love to travel around our Beautiful Country and sometimes, like now, Imran has to travel for work with his new responsibilities calling for it more often these days. I am so blessed and fortunate enough that my amazing husband, pays for my travels with him, especially with in South Africa❤️❤️❤️

This time we are back in the Mother City~Cape Town. It’s the 1st time we have done a self catering option in this part of the country, oh yes we have done many other self catering options in other parts of SA, but for Cape Town we always preferred hotels because of the travelling via airlines to get here, nope we have never driven this way before?(Definitely on our To Do List).

Now with just 2 more days in this Beautiful part of SA and a fridge still boasting a few supplies from the grocery store, I just had to make something up with those last few ingredients left, (some left over Cooked Chicken from a previous meal, 1 round of Feta Cheese, half a bottle of a Woolworths brand of pasta sauce, small chunks of cheeses, half a red pepper, tray of mushrooms, a stick of butter, 3 eggs, milk and self rising flour) and ….out emerges this yumminess, what I love terming as “Want Not, Waste Not” dishes?. So here is how I went about making this Gourmet Pizza Tart.
This recipe is a “Happened Upon” kind.

GOURMET PIZZA TART (Marriam Sayed)
Pizza /Tart Base
2 Cups Self Rising Flour
1 teaspoon Salt
1/2 teaspoon of cracked Black Pepper
2 Tablespoon Butter
1 Large Egg
1/2 Cup Milk

Method
~add dry ingredients to a large mixing bowl
~rub the butter into the dry ingredients. ( all done by hand, no luxury like home appliances?)
~Beat together the egg and milk
~Use this egg/milk mixture to form a soft dough, add on more flour if dough is too sticky.
~roll out and place into a greased casserole or tray and pierce all over with a fork.
~ (no rolling pin either in this self catering apartment, so I just made do by pressing the dough into a medium sized greased casserole.)

All that was left to do was add on the toppings,
~started off by smearing a mix of tomato sauce and the olives pasta sauce to the base (as much or little as you prefer)
~layer of sautéed sliced mushrooms
~add on the left over cooked chicken or any meats that you may have in your fridge.
~now drizzle over a little more tomato sauce followed by another layer of the sautéed mushrooms.
~crumble on the round of feta cheese.
~follow with finely chopped red pepper and slices of Tomato Rings.
~I also sprinkled some Ground Green Chillies and a pinch of sugar right on top.

~bake in moderate Oven for 15-20 mins ( if crust is thicker like mine turned out, allow more time to bake through in oven)
~ lastly remove 5 mins before finishing, and throw on the grated cheeses, (I Used 1/4 cup of Mild Flavoured Tussers n Gouda together) and sprinkle on some chopped red pepper.
~Return to oven until cheese is melted and add on some chopped Coriander/ chives/ parsley just before serving .

And there we have it, a great light meal to enjoy with family and friends. Note when baked into a casserole, and not flat like on pizza pan, it does turn out more like a tart. Perfect to serve with a salad and/chips.
