This Gourmet Chicken Burger is a rather easy to prepare meal, perfect for a Friday Evening or a Laid-Back weekend.Â
Now who doesn’t look forward to some downtime over the weekend, and on such weekends, meal preps shouldn’t be a hassle and/or a tiring chore.  This recipe I had shared 2 years ago, and it seemed lost when I moved to my new website, so here goes again.  A “Fully Loaded ‘Gourmet’ Chicken Burger”, that you can get the whole family to help you prepare.  Yeah, the whole family, since topping options on this can be varied according to each persons preference, and besides, Friday Nights and weekends should be more family oriented time hey 🙂
I like to have all the topping options prepared and laid onto a platter, making it easier for each one to assemble. Gone are the days when we have to head off to out favourite burger house, to have their signature ‘Gourmet’ Burgers. Today I show you how to make one such feast, that will leave you fully satisfied, with the added benefit of good wholesome ingredients used, Â you won’t be feeling guilty to indulge on this one.

So here goes, an easy, no fuss, full of flavour, ‘Gourmet’ Chicken Burger for you to try out next.

Gourmet Chicken Burger

Ingredients:
3 Chicken fillets (butterfly along side,not cutting fully,open and flatten)
2 Tablespoon Plain Yogurt
1 teaspoon crushed/chopped Garlic
1 teaspoon Robertson Portuguese Chicken spice (or any chicken spice variety)
2 Good Pinches of Turmeric powder
1/4 teaspoon Chillie powder
1/4 teaspoon Cumin powder
1/2 teaspoon Lemon Pepper Spice
1 teaspoon salt
1Â Tablespoon Lemon juice
1 Tablespoon Nando sauce (any flavour or any variety)
Method:
~ slit fillets as mentioned and marinate with all spices for 30minutes – 1 hour
~ heat a Griddle pan and add 2 Tablespoon Olive oil
~ grill chicken fillets turning a few times until cooked through (±20mins)
~ Just before finishing off, Add Sliced Onions to the pan and sauté until soft
~ assemble the burgers as follows
~ slice seeded burger/prego buns
~ add a light spread of margarine, then mayonnaise/sauce, I used a combination of Mayo+Sweet Chillie Sauce+Nandos Peri-Peri sauce. (You can use any brands with similar taste)
~ add curly leaf lettuce variety, and onions (sauteed in pan with chicken) +
~now add the grilled chicken fillets+ thin slices of avocado and top with more mayo/sauce
~ Add sliced pickled Jalapeño or any other Pickles you enjoy.
~Serve with French Fries and ENJOY!!!

- For those on a low carb diet, The above recipe works just as well, minus the bread buns, and you could substitute the sauces with fresh salsa or sauce/mayo varieties allowed in your diet.
- you could also use a regular thick based pan for cooking the chicken fillets on, if you do not have a griddle pan.
- If you prefer a more saucier option, why not give my Tasty Nandos Strips Recipe a try, except you would butterfly the chicken fillets as stated here.
- for a more gastronomic version of this already fully loaded burger, try adding one or more of the following; a slice of cheese, mushrooms, a poached/fried egg…

Shukran Lubna, You can use any similar chicken spice available. Its simple flavours and spices that is the trick 😉

Hmmnh… I love the idea of the gastronomic version, not sure I can stomach it though but the boys sure can.
