This fruity, nuts and seeds salad is an easy to prepare salad, boasting a combination of sweet and earthy flavours. Colourful, with just the right amount of crunch, this salad, makes a perfect entertainers delight.
With the new year comes many hopes of following through with personal new years resolution, to eat healthy, eat clean, and attempt to lose weight. If that is your resolution for the year 2018, THEN I WISH YOU ALL THE BEST. PERSONALLY, I cannot rigidly keep to fulfilling a resolution, so I don’t keep any. But like yourself, I do aim to eating better quality foods. Foods that are good for my mind, body and soul. Nobody likes to eat a boring old salad, that get’s a bad name like ‘Rabbit food’. So for years now, I have been playing up our regular green salad, with bits of fruits, nuts and seeds, to add a more substantial feeling of satiation. This Fruity, Nuts and Seeds Salad can be enjoyed as lunch, or add it as a side serving with your main meal with Protein like Chicken, Fish, Lamb or Steak. Just a perfect ‘Lift Me Up’ that is so needed during these Summer Days in South Africa. Why Not try this salad with my Rosemary and Lemon Chicken Pot Roast , Monk Style Steak OR even these Crispylicious Lamb Chops …YUMMMM
For this Fruity, Nuts and Seeds Salad, I make use of One Fruit at a time with this salad, like today I made use of Strawberries. Did you know… Strawberries have an average of about 200 seeds per fruit, BUT THEY ARE NOT ACTUALLY FRUITS, because their seeds are on the outside. These plants are ‘Runners’ and not produced by seeds, and actually belong to the ROSE family. Strawberries have numerous health benefits, to name a few, like improving arthritic and gout conditions, lowering high blood pressure and because of their antioxidant properties, makes them great for our skin and immune system. With that said, You can make use of any fruit you enjoy, try mangoes, pineapples, apples, or other berries, which each have their own amazing benefits to add.
With the Nuts and Seeds, I tend to stick to what I have available in my pantry. But most often, I like adding, Pecans, Flaked Almonds, Pine Nut kernels, Sunflower seeds, Sesame seeds and a bit of Coconut flakes for more added benefits and taste.

Nuts and Seeds are just as vitally important to our health. These provide our body and immune system with much needed nutrients. Proven research records, show that consuming just a handful, of the correct nuts and seeds, a day, is bursting with essential heart healthy fats, minerals and vitamins, that help by providing our bodies with the satiating fibre, as well as providing immune boosting properties and helps in fighting off inflammation. Nuts and Seeds, most definitely has a positive effect on our bodies and mind, SO WHAT ARE YOU WAITING FOR, SNACK ON THESE HEALTHY GOODIES, AND ADD THEM TO YOUR SALADS TOO.


So here below, is my recipe for this hearty and heathly fruity, nuts and seeds salad. Add a little more crunch to your everyday salad.

Fruity,Nuts and Seeds Salad

YOU WILL NEED:
2-3 Cups Roughly chopped salad greens
1/2 Cup Yellow Pepper (Capsicum), Sliced
1/2 small Cucumber, Sliced
1/2 Small Red Onion, Sliced into rings/half rings
1/4 Avocado, sliced or chopped
A few Edible Flowers for Deco (optional)
1 Cup of Strawberries, Quartered
1/3 Cup Roughly Chopped Pecan Nuts
1/3 Cup Coconut Flakes
1/4 Cup Flaked Almond
1/4 Cup Pine Nut kernels
1/4 Cup Sunflower seeds
2 Tablespoon Sesame Seeds
1-2 Tablespoon Butter
For the Salad Dressing
2 Tablespoon Mayonnaise
1 Tablespoon Lemon Juice
salt and black pepper to season
2 teaspoon Olive Oil
Dash of Water
TO ASSEMBLE:
? Heat the Butter in a saucepan and add all the nuts and seeds. Allow to gently fry/toast on medium/low heat, until aromatic and browned. When done, Remove and allow to cool before topping onto your salad.
?Add all the other salad Ingredients onto a platter, beginning with the salad leaves at the bottom, and layering each salad ingredient on top of it.
? Scatter the Salad, with the Cooled Nuts and Seeds, and decorate with edible flowers if using.
? Whisk up the salad dressing, only adding a dash of water to thin out the consistency if need be.
? The salad can be made ahead of time, but only add the salad dressing just before serving.
THIS DELICIOUS FRUITy, NUTS AND SEEDS SALAD, IS READY TO BE SERVED AT YOUR NEXT LUNCH, DINNER, BRAAI/BARBECUE.

~ Any variety of salad leaves may be used. And you may double or triple this batch accordingly.
~ Other fruits that work well with this salad, are Mango, Pineapples, Apples and Pear.
~ Take care when frying the nuts and seeds, as they can brown rather quickly, and that will impart a burnt or bitter taste to the salad.
~ You can also scatter on Feta Cheese.
~ REMEMBER… This salad works well with any of the above mentioned fruits, nuts and seeds. So even if you add a few of the mentioned, This fruit, nuts and seeds salad will still be perfectly delicious.
