There have a few posts on my blog, where I try to create a version of my favourite, off a restaurant menu. Now, it’s about time, I share with you my re-creation of one of my favourite meals at the Spur Steak Ranches. My husband and I, are fond of going out to our local Branch, Indianapolis Spur in Benoni on the EASTRAND in Johannesburg, when we need a well prepared steak. Most often, the friendly and efficient staff would know exactly what we would like to eat, and how we enjoy the steaks prepared. A while back when we lived in Bahrain, And returned home on work visits, it became an almost ritual, for us to drop in at this local Spur Steak Ranch Hey, South African lamb/beef is among the best in the world after all, something we craved for when away from home soil.
While in Bahrain, and travelling to others gulf regions, I had relished on cheese sauces that had bits of Jalapeño in them. I confess to Not being much of a chilie lover, I still enjoyed this version of sauce. It paired so perfectly with chicken, steaks, burgers and even fries. Then to my delight, on one such visit back home, I noticed Indianapolis Spur, had my favourite cut of Steak, Fillet, with a slathering of Cheesy Jalapeño sauce. And boy did I instantly fall in love!!! I have since enjoyed this meal, alongside some fries and crispy onion rings, and on other days, along with a crisp salad, #tasteoflife #MAGIC . I now prefer to order this with a salt and black pepper seasoning, not the regular basting sauce, together the cheesy jalapeño sauce. Do give it a try the next time you visit a Spur Steak Ranch.
But until you visit Spur… why not give this version a try. A recipe that was born way back when I could not reach my local Spur from across the oceans. STEAK WITH CHEESY JALAPEÑO SAUCE

YOU WILL NEED:
FOR THE STEAK
600 Grams Steak (any cut like Fillet/Rump/Topside)
1/2 teaspoon Crushed Garlic (or use garlic powder)
1 teaspoon Salt
1 teaspoon freshly cracked black pepper
2 Tablespoon Olive Oil
~ Cut steak into serving portions
~ Marinate with ingredients mentioned above, for 10-15 minutes
~ When all other side components to be served is ready, prepare the steak according to doneness preferred.
~ Heat a griddle pan, drizzle on olive oil, and add the steaks, allow to cook for 4-5 minutes until browned, turn over and cook further for between 3-8 minutes. (for a medium or medium well steak)
~ Drop in a tablespoon of butter just before finishing off, and allow the steak to rest, before serving.
~ Top the steak with a slice of cheese and a slather of Cheesy Jalapeño Sauce.
~ Garnish and serve Immediately with Crispy Onion Rings, Chips and Salad
NOTES BY FOODEVA MARSAY
> You can use any cuts of steak you prefer, and cooking times according to your steak doneness preference. Add on the Spur range of barbecue sauce if you prefer.
> Personally, I prefer the pickled variety of Jalapeño, the fresh ones a little too pungent for my tastebuds.
> This Cheesy Jalapeño Sauce is great on French fries too, or your regular burgers.

CHEESY JALAPEÑO SAUCE

1 Cup Milk
1 and 1/2 Tablespoon Flour
1-2 Tablespoon Butter
1/2 cup grated cheddar cheese
1 Tablespoon chopped/sliced Jalapeño Chillies (Pickled variety or Fresh)
Salt, White Pepper (seasoning to taste)
1/2 teaspoon Mustard sauce
Tinge of Egg Yellow Colour
~ Make sauce by warming milk, adding butter, flour and spices, jalapeño chillies and mustard sauce
~ Whisk all the time to prevent clumping
~ Lastly add in the cheese and allow to melt in.
*The fresh Variety of jalapeño may be too pungent, so adjust quantities as preferred. The Pickled variety is slightly less pungent and is perfect to use as well.
*Save a few slices to add to the top of cheesy jalapeño sauce when serving.

CRISPY ONION RINGS (2 WAYS)

A versatile, egg-less recipe, that you can use in 2 ways, to create different versions of crispy onion rings. It’s a perfect side accompaniment to any grilled meals.
1 Large Onion, sliced into rings (any variety on onion is fine)
1 Cup Milk
~ Separate the Onion rings into individual rounds
~ Place into a vessel and top with milk. (This allows for some of the onion pungency to be drawn out.)
~ Allow to steep, for 10 minutes.
Seasoned Flour For Crispy Onion Rings
1 Cup All Purpose Flour
1/3 Cup Corn Starch (maizena)
3/4 teaspoon Salt (or to taste)
1/2 teaspoon White Pepper Powder
1/2 teaspoon Aromat Seasoning
1/2 teaspoon Vegetable Seasoning Spice (Optional), any brand.
1/2 teaspoon Bicarbonate of Soda
~ Mix all ingredients together well.
*VERSION 1 -CRISPY ONION RINGS*
~ drain out the milk from onion rings, and toss the onion rings into the dry seasoned flour.
~ Heat 1 cup or more of oil in a pan, and add onion rings.
~ Fry for a few minutes each side, or until golden brown.
~ Remove with a slotted spoon and drain of excess il onto kitchen paper towels.
~ Best enjoyed served immediately.
*Version 2 -CRISPY ONION RINGS*
Make a batter with:
1 part Seasoned Flour above
Ice cold water, to form a thin batter
~ Remove 1/4 Cup of the seasoned Flour, to roll your onion rings in.
~ Add enough ice water, to the rest of the seasoned flour, and mix well.
~ You need the batter to be thin but able to stick onto onion rings and without any lumps.
~ Add Onion rings a few at a time, into the 1/4 cup dry seasoned flour, and then into the batter, and coat well.
~ Fry in oil, turning over once, until golden brown.
~ Best enjoyed served immediately.
