AN EASY TO FOLLOW RECIPE, THIS PEPPER STEAK PIE FILLING IS PERFECT FOR PIES, OR AS ANY SAVOURY FILLING AND JUST AS GOOD AS A PIZZA TOPPING.
So every year, about this time, there is a frenzied hype as Muslims across the World begin their Ramadaan Preparations. Busy are many folks, as they do a proper spring clean-up at home, as well as finding time, ensuring their freezers are well stocked with family favourite meals, and/or savouries, that can be frozen and used during Ramadaan. Don’t believe me??? Just have a peak at all the social media platforms, which are jammed packed with delightful and yummy savouries.
This year, Like all other years, I am one of those, THAT NEVER STRESS ABOUT PREPPING AN ARRAY OF SAVOURIES/MEALS FOR RAMADAAN. Like I have mentioned on numerous occasions before, with just two of us at my table for Iftaar, It doesn’t make sense that I get all flustered over stocking my freezers. On days that I need to prepare a starter or iftaar, I do so on the day I need them, or a few days before, most often keeping away a few extras to be used for another busy day.
Last year, I shared with you my readers, a STEAK FILLING recipe for savouries, which you all loved and shared some fantastic feedbacks with me, THANK YOU!!!. So this year, I share another of My family favourite, PEPPER STEAK. another one of those that stayed with me since in food research days, whilst I played around with flavours for pies. Pepper Steak Pie Filling, is also my personal favourite, and having it crammed into a flaky pastry shell, or even a shortcrust pastry, makes this ever so delicious.

PEPPER STEAK PIE FILLING - MARSAY FAMILY FAVOURITE (Filling/Topping for pies/savouries/pizza)

INGREDIENTS
500 grams Lean Steak, Cut into Small Cubes (any Cut of steak)
2 Tablespoon Olive Oil
2 Tablespoon Lemon Juice or Vinegar
1 Teaspoon Garlic Paste (Or Green Chillie/Garlic Paste)
1/4 teaspoon Turmeric Powder
1/2 teaspoon Chillie Powder
1/4 teaspoon Cumin Powder
1 Tablespoon Worcestershire Sauce
1 Tablespoon Yoghurt
1 teaspoon Salt
2 Tablespoon Black Pepper Powder
2-3 Tablespoon Thick White Onion Soup Powder (Store bought, any brand)
3/4 cup Milk (to Dissolve the soup Powder)
1/2 teaspoon Dried Italian Herbs or Dried Rosemary or Thyme
1 Large Onion, finely chopped
1-2 Tablespoon Butter / Ghee
INSTRUCTIONS:
~ Marinate the steak, for 20 minutes, with yoghurt, olive oil, Lemon juice, Garlic/and or green chilli garlic paste, the salt and spices, and 1 TABLESPOON BLACK PEPPER POWDER.
~ Heat a pan/pot on stove top, Add the Butter/Ghee
~ Once Melted, Add in the chopped Onions, and sauté until lightly browned, and follow with the the marinated steak.
~ Allow the steak to brown for a few minutes, then add in 1/4 Cup water, and lower the Stove heat to medium/low
~ Let the steak simmer, for 20 minutes, or until tender.
~ Whisk together the White Onion Soup Powder with the 3/4 Cup Milk, until smooth.
~ Once the steak is softened, and moisture evaporated, add in the Soup Mixture, and stir well.
~ If the Peppered steak thickens too quickly, add a dash or two of water, to thin out the consistency.
~ Now add in the other 1 TABLESPOON BLACK PEPPER POWDER and the Dried Italian Herbs
~ Let simmer on lowest setting for a further 5 minutes, until peppered steak filling has a thick consistency.
~ ALLOW TO COOL WELL, BEFORE USING TO FILL PIE SHELLS, OR OTHER SAVOURIES.

> Add in Potatoes, chopped into cubes (during cooking stage), or mushrooms and peppers, for a varied filling option .
> The Amount of Black Pepper Powder may be adjusted to suit your family’s preference.
> You can substitute the milk, for half cream/half milk, or All cream. OR use Water instead of milk or cream, if your diet requires.
> Instead of the Powdered Soup used as a gravy thickener, you could make up a peppered sauce, using my Master White Sauce recipe., together with black pepper powder. OR simply use Corn Starch.
> Lean Steak is what I prefer, but you can use any cuts of steak with a little more fat content on it.
> Try this recipe, as a meal, simply cut the steaks into larger portion sizes, and serve with a salad or starch of choice.
