Loaded with Pickles and Salad Ingredients, and brought together with a tangy yoghurt and light Mayonnaise dressing, this Gourmet Crunchy Potato Salad, is sure to be firm favourite at your table too.
POTATO SALAD… Who doesn’t like potato salad. In South Africa, this is one of the many side dishes that are quite popular. So much so, that many delicatessen establishments, even have their unique way of whipping these up for their customers.
And that is exactly how I was inspired to whip up this style of potato salad, after having tried a deli purchased potato salad, at a braai. With the first forkful of potato salad, my tastebuds exploded and danced with joy, at the various flavors and textures. The ‘wanna be’ chef in me, began analyzing each ingredient, As I Ate (Yeah, I try to figure out a dish as I eat, lol), before this deli style version was born. This Gourmet Crunchy Potato Salad, is perfect for a Braai/Barbecue (hey we South African’s need no excuse to braai), or even as a side or salad option for lunch or supper.
For the crunch, in goes Chopped Red Onions, Gherkins, Capers, Shredded Carrots, Finely sliced/chopped Celery (optional) and Boiled eggs.
Keeping this a little healthier, I make the creamy dressing using of Plain Yoghurt and Light Mayonnaise.

For best results, Use a waxy Potato, and for a more refined texture and look, Make them Like I did here..Using Baby Potatoes with the skin left on.

Gourmet Crunchy Potato Salad

1kg Potato, Peeled and Cubed
(Baby potatoes work as well, Halved after boiling)
2-3 Eggs, Boiled
1 Small Red Onion
1/4 Cup Chopped Capers
2-3 Pickled Gherkins, Dabbed dry and Chopped
1 Carrot, Shredded
1/4 Cup Celery Stalk, Finely sliced (optional)
TANGY YOGHURT AND LIGHT MAYONNAISE SALAD DRESSING
1/2 Cup Plain Yoghurt
1/2 Cup Light Mayonnaise
1/2 teaspoon salt or to taste
(Pink Himalayan Salt is great)
1/4 Teaspoon Sugar
1 teaspoon Cracked Black Pepper
2 Tablespoon Olive Oil
1-2 Tablespoons Freshly Chopped Parsley, Rosemary and/or Coriander
1/2 teaspoon Garlic Paste (optional)
Splash of Water/Milk or Lemon Juice to thin out the dressing.
~ Peel, Cube and Boil the Potatoes, in Salted water
~ When Potatoes are tender, strain off water and allow the potatoes to cool well.
~ Boil the Eggs, for 10 minutes, Then strain off excess water and carefully peel away the egg shells and allow the eggs to cool off well, Then Chop Eggs as desired or Shred.
~ Prepare all the other chopped or shredded ingredients needed.
~ Whisk up the Salad Dressing.
~ In a Large Glass Mixing Bowl, add in all the cooled down ingredients, and the crunchy salad/pickle ingredients
~ SAVE A FEW TABLESPOONS OF SHREDDED CARROTS AND EGGS FOR ADDING AS DECO ON SERVING PLATTER
~ Season the potatoes and crunchy salad ingredients with salt and cracked Black Pepper
~ Add in 3/4 Cup Of the Tangy Yoghurt and Light Mayonnaise Salad Dressing to the mixing bowl, and gently toss all the ingredients to coat the potatoes well.
~ Adjust seasoning if need be.
~ Plate this Gourmet Crunchy Potato Salad, onto a Serving Platter, and scatter the reserved carrot and eggs around the top, And Add the reserved Salad Dressing as well.
*Serving Suggestion … For a more vibrant Salad, Add a few crunchy salad leaves at the bottom of platter, and throw on a little Microgreens on top at serving time.

> Other vegetable you can add, Tri-Colour Peppers (Capsicum) , and finely chopped/sliced Radish
> For a more creamier Salad Dressing, you could opt to use regular Mayonnaise or why not use my Cream Cheese Salad Dressing
> Any liquid can be used to thin out the dressing slightly…like water, milk or fresh cream
