A simple yet flavourful way to serve Fish, this Pan Fried Masala Fish is perfect for anytime of the day, week, or year.
Masala Fish, has always been a firm family favourite in not just my home, but many South African Indian homes across South Africa. There are a variety of ways that Masala fish can be prepared, sometimes by simply adding or removing ingredients, that make it each family’s unique way to prepare masala fish. Having grown up in Durban, on the East Coast of South Africa, we were privileged to get fresh fish, at times directly from the ocean, thanks to passionate fishermen in families.
On my recent travels to Kerala, India, I so thoroughly enjoyed the way the chefs prepared their masala fried fish, that it proved as close to what many Durbanites, have grown up enjoying back home, thanks to our ancestors. This Masala Fish Recipe, works best for White Fish., and can include Fresh Line Fish or Frozen varieties. Only after moving to Johannesburg, did I actually start making masala fish with hake.
As our country is now in for a further Lockdown, until the End of April 2020 (as last announced by our President), it is sure to be a difficult time for all. But when planning to purchase essentials, add a box or 2 of Hake fish, or if you lucky enough to get fresh variety fish, then do so. Lockdown, globally, has proven to be a major challenge on the meal preparing front as well. So today, I show you how You too can make a delicious meal, with loads of flavour.
So wherever you are in the Country, or World, Wishing you are all safe during this COVID-19 Lockdown. Stay Safe, STAY HOME and eat better. This Pan Fried Masala Fish, is just the way to start. I have also paired this masala fish, with lightly spiced baked sweet potato rounds and steamed pumpkin to go as side dishes. Sounds Yummy??? You can also find those recipes further down.

Pan Fried Masala Fish

You will Need
300 grams Fish Fillets (either with or without skin on)
1 Tablespoon Chillie Powder
1/2 teaspoon Turmeric Powder
1 teaspoon Coriander and Cumin Powder
1/4 teaspoon White Pepper Powder
1/2 teaspoon Garlic Powder or 1 teaspoon fresh garlic paste/chopped
1/4 teaspoon salt or to taste
2 Tablespoon Lemon Juice
2 Tablespoon Olive Oil or Vegetable Oil
Instructions
* Make a paste with ingredients, and Rub onto fish fillets
* Allow to marinate for 30 minutes
* Heat 2 tablespoon olive oil in pan, When hot, place fish fillets, skin side down
* Allow to cook for 3-4 minutes until skin begins to crisp
* When skin is crispy, carefully flip over fish filets and allow to cook for a further 3 minutes or until done.
* Add in 1 tablespoon butter or ghee to pan to help lift spices from pan.
* Add in a few cocktail tomatoes and 1 or 2 sprigs of Fresh Dill and 1 tablespoon finely chopped fresh dill to pan. Allow to simmer until tomatoes are blistered.
* Serve masala fish immediately , preferably with skin side up, with a side of vegetables or salad.

NOTES BY FOODEVA MARSAY
- You can use any variety of fish, simply increase ingredients amount if more fish is being used.
- The thicker cuts of Fresh Fish, fry the fish then in more oil.

Lightly Spiced Baked Sweet Potato Rounds

Ingredients
1-2 large Sweet Potato, sliced onto rounds
1/4 teaspoon or less Turmeric Powder
1/2 teaspoon Chilli Flakes (crushed Chillie)
Dash of Cinnamon Powder
Salt and Crushed black pepper to season
1/4 teaspoon each of Nigella Seeds and Cumin Seeds
1-2 Tablespoon Olive Oil
Instructions
~Toss all together
~Bake in oven proof dish at 200 degrees, with a 1/4 cup water, for 20-30 minutes or until done.
~You can cover with foil and bake or allow to bake without any foil..until crisp
~Serve immediately as a side dish
NOTES
> Try this with same spices, and make a Sweet Potato Fry on the stove top.
(Like regular Aloo Fry)

Steamed Pumpkin

You will Need:
200 grams Pumpkin , Chopped into large Cubes
Salt and White Pepper to season
Dash of cinnamon Powder
Dash of Vegetable Seasoning (optional)
1/4 Cup Water
1 Tablespoon Butter
~Add spices to pumpkin and Steam with water, in a pot
~When pumpkin is slightly tender, add in the butter, lower heat and allow to the pumpkin to further soften and gently stir if sticking to pot.
~Add more water gradually to steam pumpkin if still firm.
