Aromatic Masala Steak

This Aromatic Masala Steak, is deliciously fragrant and moreish.  Perfect for any season, all year round.

Like many of my readers know, I am a self confessed fussy eater.  I have many foods that I just do not eat.  Curry, that is loaded with tomatoes is one food I don’t eat.  So, many a time, I would recreate a dish to suit my taste.  That is exactly whatI did with this Aromatic Masala Steak, a dish I learnt from my dear mother in law.  She always fussed, and worried, when I couldn’t enjoy a dish she prepared for the rest of the family. This particular dish, she loves making as an accompanying array of dishes to a regular, Khurri Kitchri for ‘Jummah Lunch’ (Friday Lunch), when I am with them.

She usually would add a tiny bit tomato to this dish, just for me. I have come to making this dish, using Tomato paste instead.  Either way, both variations are super delicious, and can be enjoyed all year round.  Another variation you may like, if Steak is not what you prefer, Is to use Lamb cuts or Chicken.

Here I share this recipe, with steps to make it a little easier to understand.  I will drop a few step by step pictures as well, to refer back to, and the entire recipe without the pictures.

Aromatic Masala Steak/Lamb/Chicken

Step 1:
1 kg  Steak, Cut into thick strips or Large cubes
1 teaspoon Crushed Garlic (or paste)
1/2 Cup Plain Yoghurt (or Maas/Sour milk)
1/4 teaspoon Turmeric Powder
1 teaspoon Chilli Powder
1/2 teaspoon Chilli Flakes
1 teaspoon Salt, or to taste
~ Let this marinate for at least 20 minutes

Step 1: Marinate the steak

Step 2:
1 medium onion chopped
1 sprig Curry Leaves
4-5 Whole Elachie (Cardamom)
1-2 Cinnamon Sticks
1/2 teaspoon Whole Cumin Seeds
1/2 teaspoon Whole Shahjeera Seeds
1/4 Cup Vegetable Oil
1-2 Tablespoons Ghee
~ Heat Oil/Ghee
~ Sauté onions with whole spices and curry leaves,  until softened and translucent.

Step 2:

Step 3:
1/2 teaspoon Red Garlic Masala (or use regular ginger garlic paste)
1/4 teaspoon Turmeric Powder
2 teaspoon Chilli Powder
1 teaspoon Cumin and Coriander Powder (dhana jeera powder)
1/2 teaspoon Garam Masala Powder
2 Tablespoon Tomato Paste
~ Stir these spices until incorporated in the oil  and onions.
~ Now add in Marinated Steak, from step 1, into pot, stir well to coat the steak

Step 3:


~ Add in 1/2 Cup Water,  lower heat  and cook until steak is tender.  More water may be added gradually if need be.
~ Adjust Salt if need be.
~ When the oil/ghee surfaces, and steak is tender, the dish is done.

Step 3 cont…:

~ Serve Hot,  with a side of rice/roti/Flatbread.
~ Makes for a delicious side to Khurri Kitchri as well.

*  This recipe works well LAMB OR CHICKEN.  Chicken will need less time to cook, as compared to steak or lamb.
* Add 1-2 Grated Tomatoes,  if more gravy/saucy end result preffered.

    1. A regular Sunflower oil was used. But yes, you may substitute with any you prefer, but do keep in mind, taste and flavour will be different/altered. However, if you are comfortable with flavours from those oils mentioned, then go for it. Happy Cooking!
