Classic Lemongrass Chai
This Classic Lemongrass Chai is Aromatic and Flavourful. A simple to make tea that proves to be a perfect indulgence, anytime of the year.
Remember My golden Oldie post, Chai Latte a la Marsay, that was a mix of whole spices that was an amalgamation of flavours that was both mine and my, now late, ABBA (father). It’s been winter all over again in Johannesburg the last week, even though we in Summer. After the hectic heatwaves we had, the rainy and icy weather was a welcome relief. At the Sound of falling rain hitting onto my roof top, brought on a new wave of heartbreak and missing for my late ABBA. And it just seemed like the right excuse I needed, to whip up His Classic Lemongrass Chai.
‘Junglee Chai’ (my urdu speaking readers will relate to this terminology), as ABBA referred to it, was probably the only time my ABBA got busy in the kitchen. Since I was 8-9 years old, I watched him lovingly prepare a mean pot of lemongrass chai. It became a weekend morning ritual, that he relished, producing the most aromatic and flavourful Cup Of Tea, that he treated his friends to after their weekly zikr sessions.
A WISE OLD MAN ONCE SAID, “KEEPING CHAI MAKING SIMPLE, BUT PREPARED WITH LOVE, IS THE SECRET TO A PERFECT CUP OF CHAI.” (~A.W.ESSA~) … That’s My Abba, He was indeed a wise old man, whom I dearly miss.
The last time I personally stood by his side watching him brew 2 cups of his special Junglee chai, was when my only darling brother, Mohammed Bilal, turned 40, a couple years back. A special moment just for father and son that they both relished.
Lemongrass has many health benefits, like relieving bloating, boosting oral health, helps lower cholesterol, detoxify the body and even helps fight depression. These are just some of the benefits of Lemongrass Tea. The simplest way to enjoy a cup of Lemongrass Tea, would be to steep a few snippets of Lemongrass leaves or Stalks …in a cup of boiled water. Allow to steep for 5 minutes, strain and enjoy.

Let me show you how, as I share with you our family favourite Lemongrass Chai recipe with a variation, and I do hope you give this one a try soonest. CLASSIC LEMONGRASS CHAI (Junglee Chai) - Marsay Family Favourite

Classic Lemongrass Chai ~ Variation 1

You will need:
2 Cups Fresh Milk
2-3 Black Tea Teabags (OR USE 2-3 Tablespoon Loose Black Tea
2 Blades of Lemongrass Leaves (washed and snipped into pieces)
Sugar or Alternative sweetener To sweeten (according to preference)
Tea Strainer
INSTRUCTIONS:
~ Add the Milk to a sucepan and gently warm on medium heat.
~ When warm, add in the snipped lemongrass leaves.
~ Lower the stove heat to low, and add in the Teabags or Loose Tea
~ Allow the tea to brew on low heat until it boils and the tea is fragrant and aromatic.
~ Sweeten according to Preference.
~ Strain the brewed Lemongrass Chai into cups and Serve piping hot with your favourite tea time treat..or just perfect al on it’s own.

Classic Lemongrass Chai ~ Variation 2

You Will Need:
1 -2 Lemongrass Stalks (slice into rounds)
1/2 Cup Boiled Water
2-3 Black Tea Teabags (or 2 tablespoon loose tea)
1 Can Evaporated Milk (380g Can)
Sugar or Alternative Sweetener to sweeten (according to preference)
INSTRUCTIONS:
~ Add the boiled water to a saucepan, together with the sliced Lemongrass Stalks
~ Allow to steep and simmer on medium for 2-3 minutes
~ Now add in the Teabags or Loose tea
~ Followed by adding the evaporated milk.
~ Lower heat on stove and allow the Lemongrass Chai to brew, pressing down onto the cut Lemongrass stalks to release maximum flavour.
~ When Chai comes to a low boil, and is aromatic, sweeten according to preference.
~ Strain the Classic Lemongrass Chai into cups and serve immediately.
