This easy to prepare Pasta and Pizza Sauce, with a delicate fusion of flavours, will have your tastebuds journey all the way to Italy.
Marinara Sauce or Neapolitan Sauce, better known to you and I as Pasta or Pizza Sauce, has it’s origins in Naples, Italy. There are some theories that claim this sauce had been originally made by the ‘kitchen cooks’, on board Neapolitan ships, or the wives of sailors returning from sea. Whichever it was, The world relished on this simple sauce, and probably is one of the best known sauces worldwide.
The simplicity of preparation, as well as simple taste, makes this sauce very versatile to have in your kitchen pantry/fridge, with uses that can varied with a number of dishes. I loved our holiday to Italy in April 2016 (Travel Through Lenses – ROME, ITALY ) , and this marinara sauce was always a star in lots of the vegetarian dishes that we had opted for. But, with years, many different variations have turned up with regards to this pasta and pizza sauce. My family for one, have been using this type of homemade pasta and pizza sauce, but with our own fusion of flavours with added spices. Typically, this sauce makes use of only, tomatoes, onions, garlic and basil. Not very long ago, I had refreshed my tiny vegetable patch, and added some Basil seedlings. They have grown superbly, and this was the perfect time for me to document this recipe in which I make use of my fresh homegrown basil. So allow me to share with you, my family favourite of this classic Italian sauce, and I look forward to hearing from you in comments.

BEST HOMEMADE PASTA AND PIZZA SAUCE (MARINARA/NEAPOLITAN SAUCE) -MARSAY FAMILY FAVOURITE

4-5 Medium Tomatoes (peeled and chopped) – 1 Cup
1 x 410 grams Can Chopped tomatoes (1 and 3/4 Cups)
1 large/medium onion chopped
1 Tablespoon Garlic, chopped or minced
2 Tablespoon Olive Oil (I used Jalapeño Flavoured olive oil)
1/2 teaspoon Kashmiri Chillie Powder
1/2 teaspoon Chillie Flakes (crushed chillie)
1/2 teaspoon Coriander and Cumin Powder (Dhana/Jeera powder)
1/2 teaspoon Vegetable Spice (optional – I used the Ina Paarman Range)
1 1/2 teaspoon Sugar
1/2 Cup Water
2-3 Tablespoon Tomato Paste
2 Tablespoon Finely Chopped Fresh Basil
1/2 teaspoon Dried Origanum
1/2 teaspoon of Salt and Black Pepper each, or to taste
? To a saucepan, Add the Olive oil and heat.
? Add the chopped Onions, and sauté until translucent.
? Now add in the Spices and Garlic to the oil, and stir. Follow by adding the chopped and canned tomatoes, Mix through well.
? Add in the Water, and gently simmer the sauce on medium low heat, for 20 – 30 minutes.
? As the water evaporates, you can add more water if need be. After 30 minutes, Add in the Sugar, salt, black pepper , as well as the Basil and Origanum. Stir through well.
? Lastly add in the Tomato Paste, and allow the flavours to all blend in.
? At This stage, The pasta and pizza sauce is ready, with a bit of chunky bits if you prefer it that way. For a Smoother Finish to the sauce (my preference) , Blend the sauce using a handheld stick blender, or liquidiser.
? Serve this Sauce HOT, over your favourite Pasta with a sprinkle of Parmesan Cheese. OR
? Allow the Sauce to cool well before bottling. Keeps well in the refrigerator for weeks, and perfect to add to your pizza base.

~ You can opt to leave out the spices, in this pasta and pizza sauce, for a more authentic Italian Flavour.
~ For an even smoother and silkier sauce, after blending, you can strain the sauce through a sieve.
~ This Homemade Paste and Pizza sauce makes for a perfect addition to any dish, including vegetables.
