Simply Delicious Chicken Fajita, is just that… A SIMPLE YET DELICIOUS Chicken Fajita. A quick and Easy Chicken Fajita recipe, that is nutritious and bursting with flavour.
Fajitas are a classic TEX-MEX cuisine. Originally, Fajitas referred to tortillas served with crispy grilled meats. This is my version of this world cuisine, one that I love whipping up on days that are rushed or even on a hot summers day. We are still in Summer Season in South Africa, so this Simple Delicious Chicken Fajita was a perfect meal. If you need a no-fuss and minimal preparation and cook times, is exactly what you need, then this is one such recipe that will sure become a firm favourite in your home too.
My family and I Also enjoy Fajitas served on a bed of Salad, we call it, Fajita Salad. Fajita can be made with any number of protein options, chicken, steak, shrimps/prawns and even vegetarian options. If you are serving Fajitas on a Tortilla Wrap, then Using some kind of sauce or spread, or even just sour cream and salsa takes the tortilla wrap to new heights. Also by Adding more spices to the chicken and vegetables during cook time, will also add a more spicier take on the fajitas, depending on your preference. In the recipe, I use regular spices in my kitchen, and don’t necessarily let it marinate for a long time.

When serving Fajita as a salad topping, Gently Toss in Sliced or Chunks of avocado, just before serving to allow the spices to coat the avocado. YUMMY!!!

Simply Delicious Chicken Fajita

YOU WILL NEED:
500-600 grams Chicken Fillets, Sliced into Strips
1 teaspoon Garlic and Green Chilli Paste/Crushed (or regular Chopped garlic)
1/4 teaspoon Turmeric Powder
1 teaspoon Chilli Powder
1/2 teaspoon Smoked Paprika (Or regular Paprika)
1 teaspoon Cumin Powder
1 teaspoon Salt (or to taste)
2-3 Tablespoon Lemon or LIME Juice
1/4 Cup Olive Oil (Or vegetable Oil)
1 Cup Green and Red Peppers, Sliced
1 Onion Sliced into Half rounds (medium Thickness)
Handful of Chopped Coriander (Cilantro)
INSTRUCTIONS:
~ Marinate the chicken strips in all ingredients, except the oil, peppers and onions. Marination time for a minimum of 10 Minutes, longer if you have time.
~ In a large Skillet/Pan, Heat the Oil and Add in the chicken strips.
~ Stir-fry this until excess moisture evaporates or done. Do Not let this dry out.
~ Add in the sliced Peppers and onions. * At this stage, Sprinkle on a little more of each dry spice powder used earlier, over the peppers and onions. This allows for a spice flavours to Integrate with the vegetables added.*
~ Add a little more oil if you prefer, or if the Fajita looks dry.
~ Stir fry until peppers and onions are soft. Add in chopped Coriander when done.
~ Serve HOT, onto tortilla wraps, with sour cream, salsa, guacamole.
NOTES BY FOODEVA MARSAY:
~ This recipe can be made in the oven as well, Marinate all ingredient together, spread out onto a sheet pan and grill until done. toss a couple of times during grill/bake.
~ For a healthier option, serve this chicken fajita on a bed of salad, Fajita Salad;-). Toss in sliced Avocados into the chicken fajita in pan, just before finishing, to coat the avocado in spices and warm it through. YUMMY!
~ Use Steak and Prawns/Shrimps for a different protein option.
~ Use the same spices and techniques to do a vegetarian option of fajita. Omit the chicken and use the peppers, onions as well as other veggies you enjoy, mushrooms or even sliced tofu and beans work great.
