You don’t choose your family. They are God’s gift to you, as you are to them.
Family is most definitely GOD’S gift to us. One of many GIFTS that I am ever so Grateful for. This post idea was actually sparked by a recent Family Meet-Up, with some of my cousins that we hadn’t seen since growing up. And now back in touch again, some of us cousins are planning a little bigger Get Together that will include the family’s grandparents, aunts, uncles, siblings, kids and grandkids.

Not very Often in Blogs posts, or other recipe share platforms, is there ever mention of AUNTS. GOD created these beautiful Souls to be like a second MUM to us. They Give you hugs like a MUM, Some would keep secrets like a SISTER and better yet, Share LOVE like a FRIEND. I know God has blessed me, BECAUSE I HAVE THE BEST AUNTS EVER. Growing up with my Late Mummy, always being ill, It is thanks to extended family that have always been there for us. Both my Paternal and Maternal AUNTS, have been core family members in my life growing up, and imprinted in me many fond memories.
Like these Cardamom Flavoured Indian Fried Cookies, that my family refer to as KHAJOORA. My AUNTS, Munnie Khala(MATERNAL AUNT) and late Tahira Poopie(PATERNAL AUNT), had always made these delicious sweet treats, that had become one of many family favourites. Now these types of Fried Cookies, are referred to by various different names, like Mitha Tukra, and over the years many families have added or left out ingredients to make this their own. Do let me know what other names you may refer to this sweet treat by?.
Being an AUNT myself, I find myself doting on my nephews and nieces. I would love, and PRAY, to be around for them as my aunts have for me. So This Recipe share is a little legacy that my Family and I, are proud to leave behind. SHUKRAN to Both my mentioned Aunts?, as its their recipes’ I’ve made slight tweaks to, and share with you today.

Marsay's Family Favourite - KHAJOORA (Indian Fried Cookies)

INGREDIENTS and INSTRUCTIONS
3 Tablespoon Butter (50 grams)
2 and 1/2 Cups All-Purpose Flour
3 Teaspoon Baking Powder
? Rub Butter into the flour and baking powder, until it resembles bread crumbs.
1/2 cup sugar
2 ts elachie powder
? Mix Through well…
MAKE A SOFT DOUGH WITH..
1 Extra-Large Egg
1/2 Cup Milk
? Whisk the Egg in 1/4 cup milk and add to the dry ingredients, mix together and add the rest of the milk gradually, until a soft, non-sticky dough is achieved. Use more flour for dusting if need be.
? Allow Dough to rest, covered, for 10 minutes, whilst you heat up 1-2 cups Vegetable Oil, on moderate heat, until hot.
? Divide the Dough into 2 Portions, and roll out each one, not too thinly, and cut out shapes your prefer. I did Thick Strips then cut those up into diamonds and squares.
? Fry the Cookies, until GOLDEN BROWN, turning a good few times during frying.
? When Done, Strain off the fried cookies with a slotted spoon and allow excess oil to be absorbed on Kitchen Paper Towels.
? Once Cooled well, Store in a Air Tight Container, and best ENJOYED WITH YOUR FAVOURITE CUPPA☕️
