½Teaspoon Nigella Seeds (Kulonji Seeds)Optional
Extra Ingredients needed
Flour for Dusting
Vegetable Oil for greasing bowl and hands
Instructions
Preheat Oven to 180℃ - 190 ℃ .
Make a Soft dough with all Ingredients, except the olives and nigella seeds
Grease bowl with a little oi and place dough into it. Add a drizzle of oil to top of dough, spread evenly and cover with cling film. ensure the cling film touches the top of the dough.
Cover the bowl and all the dough to rest, in a warm spot, for 1 hour, until risen.
After 1 hour, and the dough has risen, add in the chopped olives and nigella seeds. Lightly grease your hands with oil to help with incorporating the olives and seeds into the dough.
The dough is ready to be shaped. Here small round rolls were made, and placed in a round baking tin, for pulling apart when done.
Brush the tops of roll with water, sprinkle on Nigella seeds and a dusting of sifted flour.
Bake for approximately 20-30 minutes, on middle rack, and place a few ice cubes at the bottom of oven to help create steam that helps with crispy crust formation.
Remove from oven when done, and place a clean kitchen towel over the baked rolls for 1-2 minutes, then remove it and place rolls onto cooling rack.
