Assan Chicken Roast

Siblings…. As I sit here blogging, I Can’t help but reminisce of all the good times we had growing up. Whatever had us siblings having those little niggly quarrels growing up, is now in adulthood all banished to the furthest memories, opening up to what can be best termed as friends for life now.

After mariages, when siblings get scattered all over the country, it is such a huge relief to have all these modern technologies today, that with just a push of one button, we can all stay connected❤️

My blog today is related to my youngest sister, Humarah, who when growing up had always looked up to our eldest sister, and I hope myself?, and here we are today, grateful that they have both given me the opportunity to be the “Worlds Best Aunty” to my adoring nephews and nieces. It is during one of my “Off Days” when you just become blank as to what to whip up for dinner, when she comes to my rescue, sharing her doting in laws recipe that she has mastered. Now with her permission, I will share on this delectable recipe that will have you returning to it time and again, for a Quick and Easy Chicken Roast.

Assan Chicken Roast Before Grilling

ASSAN CHICKEN ROAST

RECIPE CREDIT: HUMARAH ASSAN and FAMILY

Ingredients
Make a marinade with the following ingredients;
1/4 cup vegetable oil
1 teaspoon Ginger and Garlic Paste(i preferred the red ginger/garlic paste)
1/4 teaspoon Turmeric
1 1/2 teaspoon Chilli Powder (add more for a more pungent/spicy taste)
1 teaspoon Robertson Chicken Spice/Portuguese Chicken Spice
1 teaspoon Salt or to taste
1 1/2 Tablespoon Mayonnaise
1 1/2 Tablespoon Tomato Sauce (any brand)
1 Tablespoon Sweet Chillie sauce
1 Tablespoon Peri Peri/Prego Sauce
1 Tablespoon Lemon Juice
whisk above ingredients to make the marinade.

Instructions 

~ rub/brush each piece of chicken with marinade
~ place into an oven tray/casserole
~ add to tray and chicken pieces, 3 Carrots cut in Halves, 1 Pepper cut in large chunks, 2 Potatoes cut into wedges and half an Onion cut into thick rounds
~dot all the above with 1 Tablespoon butter
~cover with foil and bake at 200 degrees Celsius for 30 minutes
~remove foil, turn chicken pieces and veggies once and bake for a further 10 minutes or until done.

ENJOY!!! Serve with a crisp salad and rolls.
