Hi all, I know I’ve been AWOL for a bit, Guilty as Charged. With year end commitments and Holidays away, hope you all, like myself, have had a fabulous rest and all recharged for the new year, Wishing you all a fantastic 2014 ahead.
What better way to kick start my new year blogging than with a food related blog;-) , So here goes, hope you all give it try in the near future and would love to hear your feedback.
“NO FUSS” Chicken Alfredo ~ Pasta

INGREDIENTS
500g (2-3) Chicken Fillets cut into this strips
200g Mushrooms chopped (any variety you may prefer)
1 Tablespoon Crushed/minced Garlic
2 Tablespoon Plain Yoghurt
Tiny pinch of Turmeric Powder
1 Teaspoon Salt
1 heaped Teaspoon of Robertson Lemon Pepper Spice
1/2 Teaspoon of Dried Robertson Origanum
1/2 Teaspoon of Robertson Paprika
2 Tablespoon of Olive Oil
Small knob of Butter
500ml Fresh Cream
METHOD
~Cut,Wash and Drain chicken Fillets
~Marinate with all the above ingredients
~ Heat Olive Oil and Butter in a Heavy Based pan
~Quickly brown the chicken fillets, add a splash of water, lower heat and allow to cook through for 10mins
~Now Add in the chopped Mushrooms
~Allow to cook for 5mins, Then add in the fresh cream thats slightly warmed in a separate pot.
~ Also add in 1 Tablespoon of Corn Starch (maizena) mixed well with a little water, this allows for a slightly thicker sauce to form.
~Simmer on very low temperature for 5mins or until sauce consistency you prefer is reached.
~At this stage check your salt seasoning and add a good sprinkle of either Cracked Black Pepper or White Pepper powder.
While the chicken, mushroom and cream are on simmer, prepare pasta of choice, as per pack instructions. I’ve used Fettuccine today, but you could give Penne or Tagliatelle pasta a try, would be just as divine;-)
All that’s left to do now, is PLATE UP and SERVE
~Add the prepared Pasta to the bottom of a deep bowl.
~ Liberally spoon the Chicken and Mushroom Alfredo, don’t forget to add some of the sauce;-)
~Garnish with chopped Flat Leaf Parsley/chives
~ And that’s it, All Done…Ready to IMPRESS your guests!
