Crumpets à la Marsay!!! ~ Sweet Friday

It has been a long while since I had the chance to pen down a blog, and my most favourite topic has to involve FOOD!!! I simply love Blogging the way I go about making even the most “common” or “easiest” of dishes.

There just has to be some reason to spoil yourself every now and again with a scrumptious sweet treat, like these crumpets, and I had good reason to make them after like forever. Wanting to make a special breakfast treat for my husband, Imran,on our 14th Wedding Anniversary that just passed during this week, I decided to quickly whip up an old fav… CRUMPETS?

There seems to be different names for what this simple treat is called, from a Flapjack to english muffins but here in South Africa we tend to call it either a Flapjack(which is slightly larger in size) OR as I’ve called it Crumpets. Whatever you may label these as, I hope you do give my recipe a try and would appreciate some feedback?

So here follows my much tested recipe that I always fall back on for a quick sweet treat, ENJOY??

CRUMPETS à la MARSAY

  • Servings: 12

Ingredients:

1 and 1/2 cups Flour (cake flour/all purpose flour)
4 tsp Baking Powder
Pinch of salt
1/4 cup sugar (could use upto 1/2 cup if preffered)
1 egg
Dash Vanilla essence
3/4 – 1 cup milk
3 Tblsp melted butter

Method:
~sift dry ingredients
~stir in the sugar
~beat the egg, vanilla and milk
~whisk together to make a thick sticky batter incorporating the melted butter in as well
~start by adding 3/4 cup of milk and gradually, more milk may be added a little at a time but batter needs to be thickish, NOT runny like for pancakes

~heat a lightly greased(tiny touch of vegetable oil) in a non stick pan
~add small ladel full of batter at a time,spreading with back of ladel into little disc shapes

~leave to cook on low/medium heat and only turn once bubbles appear on top on crumpets

~brown other side until light golden brown
~serve warm with golden syrup/jam/fresh cream/fresh berries/cherries
