With the Summer Months upon us here in South Africa, and it being the holiday season as well, nobody wants to spend hours in their Kitchen, especially in the blistering heat. So here’s hoping this recipe idea, gives you all more time to spend with your loved ones with the plus side being the compliments you get for your quick innovations in the kitchen ?
The recipe is very versatile, and can be used as a Side Dish or served Crushed/Smashed into your fav Salad, be it any of your main meals or easy entertaining at a braai/barbeque?.

4 Medium Potatoes (Peeled or scrubbed clean)
1/2 teaspoon Salt
1/2 teaspoon White Ground Pepper
1 Tablespoon Olive Oil/Vegetable Oil
2 or more Tablespoon Mayonnaise
4 x 1 teaspoon Butter
Cracked Black Pepper
Finely chopped fresh Coriander
Snipped Spring Onions/Chives
»Check if potatoes are cooked through by inserting a knife/skewer into potatoes, turn about in dish once, if need be.
»Once cooked through, allow to cool slightly, and take care not to scald your fingers when transferring to a serving dish
»Cut a small cross on the tops of the cooked potatoes, and gently press the potatoes in, to allow the potato to open up on the tops.
»Place into potatoes, The 1 teaspoon Butter and Mayonnaise(little or as much as you prefer)
»Sprinkle the chopped Coriander and Spring Onions/Chives on top
»Serve immediately with a good sprinkle of Cracked Black Pepper
