Scones are an age old Classic Tea-Time Treat. This one is surely A family Favourite in my home, Light, Fluffy, Buttery Rich scones, are reasons enough why you should be trying this one.
HELLO 2021… Please be Kind!
And just like that, 2020 has sped by at an alarming speed, leaving many of us still recovering from the Devastating intensity that Covid-19 has left behind. Many have sadly lost loved ones, some have lost jobs and some are still reeling from the after effects of this pandemic. South Africa isn’t any different, in fact, we are currently experiencing our 2nd Wave of the Covid-19 pandemic. It’s with this wave that we are hearing of so many more that have been affected by Covid-19, and now, number stats are turning into names of loved ones in our families or amongst our friends or loved ones.
I can’t stress enough how important it is to keep practising all relevant precautions with regards to this pandemic, YES our LIFE AND DEATH are without doubt WRITTEN BY THE BEST OF PLANNERS, GOD ALMIGHTY, BUT we also have the responsibility to practise safety protocols to protect not just yourself, but those around us too.
We have gotten through 2020, ALHAMDULILLAH (Praise be to the Almighty), and we can do this yet again in 2021. Who knows how long this Pandemic may be amongst us, nobody says STOP LIVING, but being sensible and responsible, is what can help save lives of loved ones.
AND LIVING WE ARE, and with any celebration, amongst the South African Indian community, sharing something sweet is always a good thing. With that in mind, I think these Light and Fluffy, Buttery Rich Scones would be a perfect tea-time treat to add to your table. I have shared a few other scone recipes I use in my home, but this particular one has always been a firm favourite.
2020 had us all baking /cooking up a storm during lockdown phases. At the moment, as I type this blog to share with you my lovely readers, South Africa is yet again placed on an amended Level 3 Lockdown. It’s Summer-time here, and parents and kids are home, restless most likely from the lockdown restrictions. BUT we can Bake right!

Light and Fluffy Buttery Rich Scones

You will Need:
WET INGREDIENTS:
1 Cup Whipping Fresh Cream (or a little more)
1 Extra Large Egg (save 2 Tablespoon to brush top of scones)
1 teaspoon Vanilla Essence

DRY INGREDIENTS:
3 Cups Cake Flour (or all purpose flour)
5 teaspoons Baking Powder
1 Cup Icing Sugar (confectioners sugar)

100 grams Cold Butter
Instructions:
~ Whisk Together well, all the wet ingredients
~ Add sifted dry ingredients to a Mixing Bowl.
~ Grate in the Butter, and rub into sifted dry ingredients.
~ Make a Soft dough using the Wet ingredients. Use a little more Fresh Cream if needed
~ Do not over mix dough.
~ Dust Work surface with flour, pat the scones dough on surface and use cutter to form scones/Or cut into wedges.
~ Brush tops with reserved egg and bake in moderate oven, until golden.
~ When done, cover with a kitchen towel for a minute or 2, to retain softness.
ENJOY with Butter/Cream/Jams

~ This recipe works perfectly with regular whipping Fresh Cream, and Icing Sugar, this is what adds to the lightness.
~ Do Not Over Mix Scone dough.
~ You may use Buttermilk or Sour Milk(Maas) to bind the scone dough.
