Pomegranate Molasses Salad Dressing

Pomegranate Molasses, is a thick dark, ruby red liquid, that has a sweet and sour/tangy taste.  It is made from a special variety of pomegranates, the juices of which are boiled to reach a thick consistency.  In Arabic, pomegranate molasses are known as  dibs rumman, and it is common in many Arabic, as well as Mediterranean dishes.

I picked up this red ruby of a gem, an import from Lebanon, at the 2017 Good Food and Wine show in Johannesburg.  I knew I wanted to use this ingredient in some dishes, and because of it’s thick concentrate consistency, I find it lasting me longer than I had expected.  But, with that said, I am glad of this, as I am able to further experiment with this tangy goodness.

So, if you have a bottle of this precious liquid in your grocery pantry, allow me to show you the 2 different ways to make use of pomegranate molasses in your salad dressing.

Creamy Mayonnaise and Pomegranate Molasses Salad Dressing

INGREDIENTS

2 Tablespoon Light/Regular Mayonnaise

2 Tablespoon Lemon Juice

1 Tablespoon Olive Oil

2-3 teaspoon Pomegranate Molasses

Salt and White Pepper Powder to taste

A few Pomegranate Arils for serving

INSTRUCTIONS

~ Add all the ingredients (excerpt the pomegranate arils), to bowl and whisk well until combined.

~ Scatter on the Pomegranate Arils on top of the Salad Dressing, and Serve the salad dressing alongside your favourite salad.

My Second Pomegranate Molasses Salad dressing, is just as good, but in this one I leave out the Mayonnaise, and this vinaigrette works perfectly with every almost every salad.  No More Boring salad, or the same old salad dressing, Now your salads can be lifted with just a simple sweet and tangy vinaigrette. Simple Pomegranate Molasses Vinaigrette

INGREDIENTS

2 Tablespoon Olive Oil

1 Tablespoon White Vinegar or Lemon Juice

2 Tablespoon Balsamic Vinegar

2 Tablespoon Pomegranate Molasses

1/4 teaspoon Sugar/Xylitol

Salt and Black Pepper to Taste

INSTRUCTIONS

~ SIMPLY WHISK ALL THE INGREDIENTS TOGETHER WELL, AND SERVE ALONGSIDE YOUR SALAD.

  • Add an optional grating of Garlic and 1/4 teaspoon of Sumac, and this makes a superb vinaigrette for my Fattoush Salad
