Portuguese Peri-Peri Chicken

This Portuguese Peri-Peri Chicken is Succulent with a Creamy Peri-Peri flavour, will have your tastebuds Screaming for more. 

And HOW GOES THE COVID-19 LOCKDOWN in your part of the Country, or World? For me, It’s going good, Alhamdullilah!  If you ask me if I miss being out and about, then YEAH, I’m human too. I so miss having a good meal prepared by someone else, or at one of my favourite restaurants. This struggle is REAL!!!  What are some of your favourite meals to have from restaurants or take always?

For me, It’s the Nando’s or Spur meals, that I look forward to at least Once a month.  Ooooh and don’t get me started on a good burger that isn’t homemade.  But, in days like these, during lockdown, I guess we just have to deal with these Cravings, and Prepare some ourselves at home.  I get asked often, is there any particular sauce you must have in your pantry?  And without a doubt, I would reply, anything that is peri-peri flavoured or with Portuguese flavour notes.  Nando’s, and Calisto’s, are just 2 of South Africa’s famous Portuguese inspired establishments.  And they have some amazing sauces, with varying peri-peri intensity and flavours.

So, on one of my craving days during this lockdown, for something fiery and delicious, I opted to whip up this old favourite in my home.  My Portuguese Peri-Peri Chicken is vertalite enough to be adapted to suit your tastebuds, and even Whip this up using chicken fillets or Strips, and can be paired with this super delicious SAVOURY RICE .

Now next time you head out for an essential grocery run, Remember to add bottle or 2 of Portuguese flavoured peri-peri sauces to your basket. This Portuguese peri-peri Chicken recipe is rather easy, and can even be used for a braai/barbecue.  We enjoyed this popular restaurant styled, Portuguese Peri Peri Chicken meal in the comfort of our home, and I served it along with Bread rolls and a fresh, crispy salad.

Portuguese Peri-Peri Chicken

INGREDIENTS

1  Chicken (either butterflied or Cut into Pieces) – 1kg to 1 1/2 kg weight -(with OR without skin on)

1 Tablespoon Chopped Garlic

1/4 teaspoon Turmeric Powder 

2 teaspoon Crushed Chillie (chillie flakes)

1/2 teaspoon Cumin Powder 

1 teaspoon Smoked Paprika (or Regular)

2 teaspoon Portuguese Peri Peri Spice (any Brand)

1 teaspoon Salt (or to preference)

2-3 Tablespoon Lemon Juice or Vinegar 

2 Tablespoon Olive Oil

CREAMY SAUCE FOR BASTING

1 Cup Fresh Cream

2 Tablespoon Mayonnaise 

10 Tablespoon Peri Peri Sauce (any brand and any variety) > Add more peri peri sauce according to preference.

~ Mix Creamy Sauce ingredients together until blended.

INSTRUCTIONS 

~ Marinate chicken for 20 or more minutes 

~ Add marinated chicken to a Pot and add in 1/2 cup water or stock, and allow to cook on medium low.

~ Turn the chicken pieces a few times, and each time baste or spoon over some of the creamy sauce. (Use 1/2 cup at this stage to baste)

~ When liquids from pot evaporates and chicken is tender, Spoon over the rest of the creamy sauce over the chicken. 

~ Now Place the Chicken Under a preheated grill, either in the same pot or an oven casserole. 

~ Grill for 5 minutes or more, or until chicken has a little charring on edges.  Spoon on sauce from pot/casserole onto the top of chicken when serving. 

~ Best served immediately, and paired with sides like Salad, Portuguese Rolls, Chips/Wedges.

NOTES BY FOODEVA MARSAY 

> This recipe can also be baked in oven,  do not add water if baking. Liberally smear on creamy sauce as the chicken bakes. 

> To Braai this recipe, Steam the marinated chicken in a pot as mentioned above, and then add onto a braai. Here too, liberally baste the creamy sauce onto chicken as the chicken chars.

> Add as much of peri peri sauce to make the creamy sauce. This one is a mild version
