Vegetarian Savoury Crumpets, need not be boring. This recipe is an easy to make one, that is bursting with goodness and flavour.
There are just some foods that can easily pass as a light meal or snack. This Flavourful Vegetarian Savoury Crumpets, is one such. If you still have family members, or you yourself, are still working more often from home during this Covid-19 pandemic, and Lockdown rules, then there is sure to be some hungry tummies for you to cater for.
Here is just one idea for making some delicious and flavourful snacks, that easily can be used as a light meal option. A great way to sneak in those veggies, especially for the little ones, or for the fussy family member, you can serve this as a side to their meat dish. Any variety of vegetables may be used, taking care that some veggies may need to be steamed, as these crumpets are made on the stove top, hence quicker cook times.

This is one of my family favourites, and we enjoy them just as is, served with a green chutney and a dollop of sour cream. What I do also like about these Vegetarian Savoury Crumpets, is that you can make a batch, and keep them in your refrigerator, to last you a few days. No stress when you need to serve a quick light lunch, and we enjoy this with a side of salad greens and pan sautéed cherry tomatoes.

FLAVOURFUL VEGETARIAN SAVOURY CRUMPETS

You will Need:
1 and 1/2 Cup Wheat Flour (All-Purpose)
3 teaspoon Baking Powder
1 teaspoon Salt (or to taste)
1 Extra Large Egg (VEGAN option- 1/4 Cup Oil)
1 Cup Steamed Sweetcorn (season with salt, pepper and butter)
1 Cup Shredded Cheese (Cheddar and/or Mozzarella)
1 teaspoon Green Chilli and Garlic Paste
2 Tablespoon Chopped Peppedew or Red Pepper
1 Tablespoon Chopped Chives (optional)
2 Tablespoon Chopped fresh Coriander (dhania)
1/2 teaspoon Turmeric Powder
1/2 teaspoon Crushed Chilli (chilli Flakes)
1 teaspoon Whole Cumin Seeds (Jeera seeds)
1/2 teaspoon Cumin Powder (Jeera Powder)
1/4 Cup Onions, Finely chopped
1/4 Cup Carrots, Shredded
Approximately 1 – 1 1/2 Cups Milk
~ Steam the Sweetcorn, with little dash of water, season with salt, pepper and a little butter until done.
~ Add all ingredients to a mixing bowl, and Gradually add in the milk to form a thick batter.
~ Heat a pan on stove top to medium heat, Pour spoonfuls of batter onto pan, ensure you use non stick spray.
~ Pour the Batter into egg or cooking rings, for a more structured and uniform Crumpet.
~ When bubbles appear on the top of crumpet, it is ready to flip over, and further cook the other side.
~ Place onto rack when done.
Flavourful Vegetarian Savoury Crumpets are ready to serve, Best enjoyed HOT with a drizzle of Green Chutney and a Dollop of Sour Cream. (or any chutney you prefer).
NOTES BY FOODEVA MARSAY
>> This can be stored in the refrigerator for upto a week, or frozen and reheated when needed.
>> You could also use Gram Flour (channa flour) for this, instead of regular wheat flour.
>> Baby Marrow (zucchini), may also be used, shred them, but squeeze out excess water, before mixing.
>> Creamed Styled Corn May be Used, But add very little milk to loosen the batter consistency
>> For the meat lovers, Add 1/2 cup or more of shredded Cooked chicken, or any other meat, into the batter before cooking the crumpets.
