“H” for HALLOUMI, Do you enjoy Halloumi cheese?
So I have a fig tree, or 2 around the garden, but have never been able to harvest any for ourselves, as the birds get to them quicker than I can. Do you have any tips that can help me harvest some of the figs this year?
I enjoy adding fresh figs to my salad and here is a Halloumi, Fig and Walnut Salad that is perfect for this unrelenting heatwave we are having in Johannesburg and across many other provinces in the country.
Here is how I made this delicious Halloumi salad, do give this a try and I look forward to seeing your feedback.

Halloumi, Figs and Walnut Salad
Halloumi, Figs and Walnut Salad, with a Minty Citrus Vinaigrette

Layer on a platter…
A variety of lettuce leaves
Thin Slices of Radish
Finely Chopped Parsley
Cucumbers (optional)
Pomegranate Arils
Fresh Figs, sliced into halves/quarters
~ Halloumi Slices, grilled in a non-stick pan, with a little butter or olive oil, until golden. (Maximum 1-2 minutes on both sides)
~ Walnuts/Pecan Nuts chopped and quickly flash fried in same pan that the halloumi was grilled in.
~ place the grilled halloumi & figs randomly around the salad platter, and sprinkle on the Toasted nuts
~ Drizzle with minty citrus vinaigrette and ENJOY
Minty Citrus Vinaigrette

Ingredients and Instructions
3-4 Tablespoon Citrus Juice (Orange/Naartjie/Lime)
1 Tablespoon finely chopped Fresh Mint
1-2 Tablespoon Vegetable Oil
1/4 teaspoon Salt
1/2 teaspoon Sugar/Honey
~ WHISK ALL INGREDIENTS together, and and let stand for a few minutes before needed, Drizzle over salad before serving.

* Use any variety of salad ingredients or sliced fruits. Slivers of orange segments complement this salad beautifully.
* Add as Much nuts and seeds as you prefer.
* Any salad dressing will work.
