This is a simple and easy to prepare, light salad option, perfect for a lunch pack up, a picnic or maybe even as a side on your dinner table. Whichever occasion you choose to enjoy this Chicken Guacamole Lettuce Cups, I hope it wins your heart over, like it did for me.
Days are slowly turning warmer here in Johannesburg. I for one am glad that winter is finally shedding her icy grip on us. This means I can finally get back to some healthier meal options again, and back to the shops it was for me, to stock up on some much needed salad greens.
I actually put together 2 of my previous recipes I have shared before, or more like the ideas of it, to create this dish. The night before saw me prepare Tasty Nandos Chicken Strips , for a light dinner. The perfect amount of heat to warm up the still chilled evenings. And no better way to enjoy these leftovers, than in a salad, together with inspiration from my 2nd previously shared recipe, my Super Easy Guacamole .
I do hope this post inspires you, my readers, to give this one a go. Sometimes this simplest of flavour, without too much of a fuss, produces an awesome end result, wouldn’t you agree?? I had been chatting with a few of my soul sisters, and there was mixed feeling with regards to how some lovelies felt about eating a salad as a meal. Do You enjoy Salads? I would love to hear from you.
Until the next post…
Happy ‘Salad Making’
Chicken Guacamole Lettuce Cups
Author : Foodeva Marsay
YOU WILL NEED:
1/2 Large Avocado
2 Tablespoons finely chopped Red onion
1 chopped cocktail Tomato
1 Tablespoon chopped Jalapeño
1 Tablespoon chopped fresh Coriander
Juice of 1/2 Lime
Drizzle of Olive Oil (I used the willowcreek jalapeño flavoured olive oil)
1 Tablespoon Mayonnaise
Salt and Crushed Black Pepper
3-4 Tablespoons left over cooked Chicken cubes (as little or more as you prefer)
2-3 large Lettuce Leaves
(Today I used Baby Gem Lettuce, but iceberg lettuce works fantastic for this too)
• chop and mix together all the chicken guacamole ingredients.
• Spoon this mixture generously into lettuce cups
• top with quarter cocktail Tomato to add more colour, and deco with a leaf or 2 of fresh Coriander.
• serve immediately with a grind of cracked black pepper, drizzle of Olive oil and Balsamic Vinegar(optional).
NOTES BY FOODEVA MARSAY
~ any types of leftover chicken may be used.
~ ‘lettuce cups’ indicates to the ‘cup shape’ of some salad leaves, use iceberg lettuce for a crispier hold for your toppings.
~ this salad is meant to be enjoyed using your fingers, but hey enjoy them anyway you choose, it’s just as good;-)
~ add the last bit of olive oil/balsamic vinegar just before serving, so the lettuce leaf retains it’s crispiness.
~ you could also serve this exact salad onto a large platter, this too either as individual servings, or the chicken guacamole topping placed on a bed of salad leaves.
*kindly share on my recipes as posted, Shukran/ Thank You?*
